We all know cold cereal is easy in the morning but it is expensive, boring, and not very filling. That's why I love homemade granola. It's simple to make, very filling, and tastes way better than anything you can buy at the store. This recipe I got from my sister years ago and it is the one I make most often. It is delicious with milk as cereal, over yogurt, or sneaking your hand in to eat plain as a snack.
Charlene's Almond Coconut Granola
3 cups old-fashioned rolled oats
1/3 cups sunflower seeds
2/3
cups sliced almonds
1/2 cup unsweetened coconut chips
1/2 teaspoon salt
1/4
cup unsalted butter
6 tablespoons honey
1 cup mixed dried fruits
Preheat oven to 350.
Combine the oats, sunflower seeds, almonds, coconut and salt in a large bowl. In a small saucepan over medium low heat combine butter and honey. When melted whisk them together and pour over oat mixture. Mix until everything is coated and spread in an even layer in a large jelly roll pan. Bake for 15 minutes mixing halfway through. Cool cereal and mix in dried fruit (craisins, raisins, cherries, cut up dried apricots, whatever floats your boat). Store in an airtight container for up to one month.
