Once again I have a problem with eating before taking a picture. You see, I wanted pie. And there was a perfectly good pie sitting on the counter. I know that the reason I made this pie was so I could blog about it with the Tuesdays with Dorie group. You would think that I would remember to take a picture of it. Of course I did not. I remembered only after half the pie had been eaten. So the picture I have today is of half of a pie.
Minus a few bites taken out if it.
Taken not by me, but of a man in my house who often goes by the name of "husband".
I guess that is a testament of how good the pie was.
I am normally not a huge fan of fruit pies. But this one was really good. I liked the combination of nectarines and blueberries and I got to use some of my frozen lemon zest which added a nice flavor. Some people complained of it being really runny so I upped the flour slightly from 1 1/2 tablespoons to 2 tablespoons. It didn't seem to make much of a difference. It was still very runny but I actually kind of liked it that way. I served it with ice cream and used the liquid as a sauce over the ice cream. So yummy.
I don't save many recipes. They really have to be worth making again. But I think this one, is a keeper.

ReplyDeleteI agree the flavor on this pie was wonderful and definitely a winner! I did make some changes by adding corn starch and tapioca to mine instead of flour! Flour never seems to thicken my fillings enough. Your pie looks perfect…so glad you enjoyed it!

ReplyDeleteI did not have blueberry and used frozen mixed berries with the nectarine: it came out delicious.
