Campfire Hash



This is my second camping meal I'm posting.  It's  a good hardy meal after a day of hiking.  It also works well for camping because kielbasa, onions and potatoes have a long shelf life.  To cut down on cooking time you can bring some leftover baked potatoes from home and just dice those up.  I sometimes leave out the garlic if it is too much of a hassle to bring it and it still tastes good.  The spiciness level of green chilies tends to depend on the can.  If you are worried about too much heat start with half a can and you can add from there.

Campfire Hash
Recipe adapted from allrecipes

2 tablespoons cooking oil
1 large onion, chopped
2 garlic cloves, minced
4 large potatoes, peeled and cubed
1 pound fully cooked smoked kielbasa, cubed
1 (4 ounce) can chopped green chilies
1 (15 ounce) can whole kernel corn, drained

DIRECTIONS
In a large pan, heat oil. Saute onion and garlic under tender. Add diced potatoes and cook, uncovered, over medium heat for about 15 to 20 minutes, stirring occasionally. Add kielbasa; cook and stir until potatoes are tender and well browned, about 10 minutes more. Stir in chilies and corn and cook until it's heated through.
