TWD Buttermilk Crumb Muffins

Happy election day!  Post is going up a little late because I went out and voted first.  And now I just keep telling myself, don't even turn on the news until at least 8 tonight because there won't be anything solid before then.  I have a feeling I won't make it that late though.  I am however most looking forward to getting my phone back tomorrow.  Yesterday I had 9 missed calls.  None of which were anyone I wanted to talk to.

On to more pleasant matters in the realm of food.  This morning I made Marion Cunningham's Buttermilk Crumb Muffins for breakfast.  To give it a little more staying power I subbed about a cup of oats for some of the white flour.  I don't think it had any adverse effects.  My muffins are a little dark because I accidental had my oven up too high, but they still tasted good.  I liked the muffins.  I thought they were just OK at first but I find myself reaching for "just one more".  In the end though, I probably won't be making them again.  Though they tasted good they weren't amazing.  If I am going to have an unhealthy breakfast I want it to taste amazing.  I have other muffin recipes that I like just as much as these (or maybe more), but I don't feel guilty feeding them to my kids for breakfast.  I guess I will have to post those recipes.

  1. My muffins resemble The Grand Canyon. They were tasty but I agree with you. I have other muffins that I really like. I won't try and perfect my Grand Canyon Cakes.

  2. Good idea to add oats. I think that would add some nice texture. I was not amazed by the muffins either, but might have been a baker issue. (overbaking, overmixing)

  4. I love how you say that if you're going to have unhealthy breakfast, it should taste amazing - I totally agree! These were okay. And that's about it. I lik the idea of putting oatmeal in them though. That would at least make them more interesting!

  5. Allison, I've added oats to the crumb and changed the recipe so much to make it less unhealthy. They turned out fine for me, great for my friends.
    It has been a great baking and changing experience.

  11. Your muffins looks like they have a tasty caramelization to them. I agree though, these are not worth the fat and calories!

  13. I thought these were good right out of the oven (though probably not the recipe I'd reach for first if I wanted something indulgent for breakfast), but they really didn't hold up well at all. I like the idea of adding oats.

  14. I live in a swing state so I got tons of calls as well. Glad that's over! I really liked these muffins but they might be a one time thing for me too. Love the oats!
